何百利於1983年在英國取得法律專業資格，於1985年成為香港認許律師，並於1990 年加入羅拔臣律師事務所。他於1991年成為本所合夥人，現時為商業訴訟部主管。
何律師的執業範圍包括商業訴訟、商業詐騙及索究申索、僱傭法、企業事務、監管機構 (證監會 / 香港聯交所)的調查和審裁、國際仲裁及緊急的非正審申請和其他補救申請 (包括資產凍結令和容許查察令)。
何律師不時在《法律名人錄》出現被推薦為訴訟律師，亦是香港民事訴訟程序 (即白書) 的特約撰寫人，曾為香港律師會民事訴訟程序改革專員委員會專家小組會員，以及香港律師會業界會員紀律處分程序的專員小組檢控官，亦於香港大學作兼職講師。
